simka2
Okay, it has been a couple weeks since I made any bread. Tonight, I was going to remedy that. I had my lukewarm water and added my yeast. Normally, it gets foamy, but tonight it's just kinda sinking to the bottom of the bowl. Why? I am still very new to this. :tongue_smilie:

LAS in LA
NM, I am a dork. It's coming back up and smells yeasty. It was just a bit different this time. Not a dork. :001_smile: Here's an interesting factoid I learned this week: yeast (for bread) doesn't feed on sucrose (table sugar). So that teaspoon of sugar lots of recipes tell us to add to the water we dissolve the yeast in? Apparently doesn't do a thing for it. Who knew? meggie
it could also help to add the sugar or a little flour at this time. It gives the yeast something to "eat" and helps it grow faster. I think my terminology is off, sorry I'm tired

LAS in LA
Peter Reinhart's book The Bread Baker's Apprentice is a great educational book, in addition to having recipes and entertaining stories.
