Here are the basic ingredients: I cooked a chuck roast in the french oven for 2 hours, and then shredded and transferred to crock pot and added the following: Garlic powder 12 oz. of pilsner 1 chopped onion cocoa cayenne pepper cumin chili powder chopped tomatoes paprika oregano 1 jar of chipotle salsa 12 oz can of chicken broth 1 pound of dried lentils 12 oz of frozen corn kernels, thawed Everything is cooking nicely...but it is REALLY bitter, with very little chili-flavour. What would you suggest I add for the last two hours to mellow the flavor a bit? I didn't add any salt because of all of the canned goods. Would that help? More chili powder? jujsky Posted April 13, 2011 Share Posted April 13, 2011 I'd add more chili powder, basil, thyme, oregano, and some cinnamon (about 1 tsp each, maybe more for the chili powder -- I do 2 Tbsps each of chili powder and paprika when I make chili). Cinnamon mellows out the flavor and makes it a bit sweeter. Also, add about 1/4 tsp allspice. HTH! Quote Link to comment Share on other sites More sharing options...
