Does anyone have any recipes for big, dense, moist muffins that aren't necessarily filled with healthy things like shredded carrots or pumpkin? Indulgent muffins? I'm betting that Sam's Club muffins are moist because of vegetable oil, but if you substitute applesauce, you'll get the moistness without all the fat. OrganicAnn Posted February 27, 2011 Share Posted February 27, 2011 Add oil and an extra egg. Shred veggies or fruit - zucchini, carrot, banana etc also help. I think you'll have to experiment to get the recipe right for you. Often store products have chemical ingredients specifically to make them moist.
