  1. Deli-Style Roast Beef

    1 (4 lb.) eye of round roast                                                   1/4 c. creole mustard

    5 cloves garlic, halved                                                           2 T. hot sauce

    1 (8 oz.) can tomato sauce                                                    2 T. prepared horseradish

    1 cup burgundy wine                                                             2 t. onion powder

    1/4 c. Worcestershire sauce                                                  2 bay leaves

    1/4 c. lemon juice

         Cut 10 small deep slits in roast; insert garlic.  Place in heavy duty, zip-top plastic bag.  Combine tomato sauce and next 8 ingredients; reserve 1/3 cup.  Pour over roast; seal.  Refrigerate roast and reserved marinade for at least 8 hours.

         Remove roast from marinade, discarding marinade.  Place on rack in roasting pan.  Bake at 325 for i hour and 15 minutes to 2 hours for medium,  (Check thermometer.) basting 3 times with reserved marinade.  Immediately wrap in plastic wrap to retain moisture.  Thoroughly chill before slicing.

     

    I prefer my meat a little more done so I roast mine a little longer.  Whatever you like.

     

    I don't know enough about the paleo diet to know if all these ingredients are acceptable.

I went with your recommendation, Vettechmomof2 and bugs.  I started reading it myself last night and I think my son will enjoy it.  He said he didn't mind the length!  I have put together a course for him - Russian history, language and culture.  This is a particular interest of his since he was adopted from Russia,  Thanks for your help!

Thank you for the suggestions.   Dh sees the doctor on Friday, so I think we will talk about meds for depression.  He is already on some, but maybe they can switch it up a bit, temporarily.  Skype is a good idea.  As far as sports go, he doesn't follow them.  He is more of an individual sports person (bicycling, swimming, running, tai chi).  The Olympics is coming just at the right time!  He can't work from home - he is a nurse anesthetist, chief as a matter of fact.

    As far as school, the library might be a good idea and I would love for my dh to get more involved in school.  I have homeschooled for around 25 years and he never has, but maybe I can push a bit.  :-)

My dh fell on ice last Thursday and broke his wrist and fractured his pelvis.  He is a very social person (unlike me) and his job is such that he spends a lot of time with and talking to people.  He is going to be laid up up to six weeks, although he is moving around some,  The problem - he is going crazy and is getting himself depressed.  He has trouble with depression in the winter anyway, but can usually keep it under control.  My question - what can I do to keep him busy and happy and pleasant?  This is really disrupting our school day.

I loved reading your stories!  We began homeschooling in 1984.  That was back in the day, when people found out we homeschooled, would look around and whisper, "Is that legal?"  haha  I am still homeschooling - we adopted a boy in 2000 and I have four more years to go.  Aside from that, I am now the homeschool advisor to two of my daughters who are teaching my grandchildren.  So fun!

You aren't going to believe this.  He just uses a Canon Power Shot camera - point and shoot.   Those snowflakes that he took the photos of were on the window of our car and the screen of our porch.  He takes incredible closeups of airplanes flying over our house by holding his camera up to a spotting scope or binoculars.

  8. Don't laugh!  When I was almost finished homeschooling my four daughters (2 in grad school, 1 in college and a senior taking some college classes), we adopted a 17 month old boy!  He is now in 9th grade.  I don't have a clue what I will do this time around.  Maybe I will help homeschool my grandchildren.
