Is there an experimental baker and recipe hacker in the house? GF muffins

I'm in love (IN LOVE) with those muffins. I'd love to be able to make them at home. Or something similar, I'm not very picky. All I know that there's a date in the center. They are not too sweet, they are not too chocolaty. They are magically just right.

Where would I even start replicating them?

Wow, they sound good.

 

The whole starting with 10 pounds of healthy ingredients and cooking it down to 1 pound sounds difficult to duplicate.

"Sweet Potato, Avocado, Apple, Banana, Blackberry, Blueberry, Cranberry, Dates, Orange and Pomegranate"

You know they use egg whites and whey protein.  I've seen a few GF recipes that use that.  You could use the Hershey Special Dark cocoa powder for the chocolate.
