Sandi_NC Posted February 6, 2008 Share Posted February 6, 2008 I've done this before and it was delicious! I just chunked up the meatloaf and added it to some homemade vegetable soup. However, I use leftover meat loaf in other dishes nearly every time I make it. It helps me to be sure to have no "waste." Plus, it makes one more meal that much easier.
