wagnfun
At Costco today I noticed a HUGE can of corn was $3.05 -- HOWEVER 8 15oz cans were up around 8. The large can is cheaper and I wondered if I could freeze the corn in serving sizes and reap the cheaper prices? Anyone know?
GSMP
I have been searching all over the net for this answer. I have looked at so many ways to freeze corn but alas nothing about canned corn. I personally don't see why you couldn't. What I would suggest is that you drain it well. I would even rinse it since it is canned corn. This will help you rinse off some of the sodium and stuff it is packed in. Then baggie it up in the serving sizes that you want. If it doesn't work when you cook it, use the frozen corn for soups and to add to your corn bread. If you do try it...you will have to come back and let us know how it works. Susie in MS
I don't see why your couldn't and what a great idea!! When we have corn out of our garden we have different ways of *picking it up*. One would be to can. But for corn on the cob we do what is called blanching. YOu allow it to boil for a short time till it starts to change color a bit then you put it in ice water till it is completely cooled. This stops the cooking process and prepares it for freezing as freezing raw doesn't yield as good a result. When we freeze creamed corn we bake it for a bit and then allow to cool then freeze. So what I am saying is your corn should freeze well. I would drain the water though.
Pongo
When I freeze fresh corn I put a little melted butter and milk in a ziplock and put the corn in. It's a trick my ds does and the corn ALWAYS tastes fresh. I have never tried it with canned though.
