I would maybe work on doing some workbox activities but doing backwards chaining on them. That way he has very little to do before seeing that it is completed and that he is successful. Once he is reliable at completing that last step add in the next. Would some sorting activities keep him busy for a while? Could always have him sort coins and then have him put them into a piggybank one by one - which I am sure you know is great for fine motor and can improving crossing midline if you set him up with the piggybank on oneside of him and the coins on the other.
