I need a really simple nacho cheese recipe

No peppers at all? Or no hot peppers?

 

This is what I do for a mild sauce:

 

Cook 1 white onion and 1 green bell pepper until soft, add 1 can of mild ro-tel (this is usually found with the canned tomatoes, sometimes with the Mexican foods). I dump this in a metal bowl and put it on top of a pot of boiling water. Then, I add velveeta and monterey jack cheese. I add in a little chicken broth and milk (maybe 1/2 cup of broth and 1/4 cup of milk? I don't really measure) to thin it out at the end.

Most rotels have green chili peppers that are of varying degrees of mildness. Some of the mild ones may be hot for a child.

 

For a request like that I might just take the canned cheese sauce like is put out on nachos at sporting events and such. You can buy that at Sam's for not much. Or, just melt some velveeta, add a bit of milk to keep it creamy, and eat. Not my favorite way to want it, but it could work.
