I watched these online videos today of a chef teaching his techniques for making *Killer Focaccia Bread* Well, words escape me...it was just :drool5: I've never had a more amazing bread. So, if you're so inclined, please give this a try. The videos are very educational. A few notes of substitutions I made: I use instant SAF yeast, so my rising times were quicker. I used plain yogurt instead of his kombucha addition, and whole wheat instead of spelt. I started at noon, really quick to mix the prefermentation (like a sour dough), then waiting, a few easy stretch and pull kneads, more waiting, and then quick baking in the hot oven by 5:00.
