    100% Whole Wheat Sandwich Bread

     

    2 Tbsp orange juice

    1 cup lukewarm water

    4 Tbsp unsalted butter, cut into 6 pieces

    3 cups traditional whole wheat flour (I use white whole wheat)

    3 Tbsp sugar

    Heaping 1/2 cup dried potato flakes or 3 Tbsp potato flour

    1/4 cup nonfat dry milk

    1 1/4 tsp salt

    2 1/2 tsp instant yeast

     

    Combine all the ingredients, and mix and knead them until you have soft smooth dough. Cover and allow the dough to rise until it's puffy and nearly doubled in bulk, 1 to 2 hours.

     

    Lightly grease an 8 1/2 x 4 1/2 inch loaf pan. Gently deflate dough, and shape into an 8 inch log. Place in the prepared pan.

     

    Cover the loaf gently with lightly greased plastic wrap or a proof cover and allow to rise till it's crowned anbout 1 1/2 inches over the rim of the pan, 1 1/2 to 2 1/2 hours (mine never takes this long). Near the end of the bread's rising time, preheat the oven to 350.

     

    Uncover and bake the bread for about 35 min., tenting it with foil after 15 min. The bread is done when it's golden brown and an instant read thermometer insterted in the center registers 190. Remover from the oven, and after a minute or so turn it out onto a rack. Brush with melted butter, if desired; this will keep the crust soft. Cool the bread for 30 min. before slicing.

     

    We really like it. It makes great sandwich bread.

  2. It could be that dough isn't being kneadded long enough. One test I've heard of is to take a piece of dough and slowly pull it apart. It shouldn't break apart but rather pull into a thin film. My last batch of bread came out flat and I had to redo it. I ended up letting my yeast, sugar, and water sponge and then making sure I kneaded long enough. For Christmas I got the King Arthur Whole Wheat Flour Cookbook and I've been using one of their recipes for bread. It has potato flakes, orange juice, and powdered milk in it and its the best bread recipe I've ever used. We love it :)

  3. I was also trying to deicde between these two.:D We are currently using TOG Y2 (did Yr 1 last year) I have a 2nd grader and a pre-K.

     

    I chose TOG because it stays with the four year rotation repeating 3 times. This was important to me. I also chose TOG because of the teachers notes and because I knew it was a program that I wanted to use later so I decided to just jump in. My boys really enjoy it.

     

    I think MFW is a great program. :) The reasons above were just what helped me decide.

  4. Ds has been very interested in piano/violin lessons but we aren't able to start that yet. I thought we would start with the recorder but I'm not sure which one to buy. I saw one listed on the rainbow site http://www.rainbowresource.com/proddtl.php?sid=1203281688-1628933&subject=17&id=004259

     

    I have no idea if this is good or bad. I don't want to spend a ton of money :o or spend to little money.

  5. I'm looking for some resources that can teach me about the elements of fiction and some literary analysis. It doesn't need to be complex but detailed enough that I can learn it and then teach it.

     

    This is for 2nd grade so I know that we don't need to go very deep. Just be able to give defintions of the basics. (we will be doing a book club) Any suggestions? I have read Deconstructing Penguins and I liked it. I just feel I need a little bit more explanation so that I fully understand.

    Do you use the workbook with this? I have taped all of this years from Dish Network (the program is on one of the university channels) and have been waiting to use it because I haven't ordered the workbook yet. What do you think about using the program w/o the workbooks? Ds is 7 in 2nd grade currently. Spanish is one of those things I've tried and tried to get in but just haven't had success with. Any suggestions?

    1. I am currently doing TOG 2 with 1 LG and preK. We do TOG each day 4 days a week. It takes about 20 min for history and literature. For history I read the book outloud and ds does a narration. For literature I read it outloud and he does the literature worksheet from TOG. The days that we do the arts/activities it takes longer. I try to schedule that for a day that we don't do science. I try to have science line up on the days we aren't doing hands on projects for TOG. I pick and choose the geography that we do this year (although next year my plan is to do it each week) and I just work it in on a lighter day.

     

    This is roughly what our TOG week looks like (our school week starts on Tuesday becauese we have co-op on Mon)

     

    Tuesday: Hands on Activities - I decided to start my weeks with this while they are in the Grammar stage because I know the boys really like the activities and I wanted the younger years to as hands on as possible. I read the teacher notes before hand and then try to do some teaching while they are working on their activities.

     

    Wed: History reading and narration (maybe geography if we are going to cover it)

     

    Thursday: Literature

     

    Friday: TOG lapbook, finish up projects and any reading we haven't finished.

     

    2. Currently we aren't doing the WA from TOG. However dh and I just sat down last night and talked about how its time to incorporate this in (we have been using FLL). The writing that we currently do (only for TOG) is for the TOG lapbook and the literature worksheet each week. I'm going to have to tweak my schedule to add the writing portion in.

     

    3. We do science twice a week on either Wed, Thrus, or Fri depending on the week. We also do a science club every other week with another family. However right now science is the first to go if we can't get to everything in a day. As far as a history notebook - do you mean a timeline? We haven't started that yet. We keep all of our work in a notebook for history but there isn't a notebook we work on.

  8. I am currently using TOG with a 2nd grader (and preschooler :D ). I decided that if I knew I wanted to use TOG later on then I wanted to go ahead and get started.:D

     

    What I like:

     

    1. By starting TOG now I will be very familiar with it in the later stages.

    2. I gain a better understanding of history and its "threads" by going through it with them at a lower level. That will be very valuable to me when my boys are in the upper levels and we are discussing what they have read.

    3. I get to pick and choose the areas I want to cover each week. For example since we are in the lower grammar stage if it is tough week in Math or Reading then I know that I need to hold back some on TOG.

    4. My boys enjoy the hands on activities.

    5. The teacher notes are wonderful. I have learned so much.

    6. It is all laid out for me

     

    Cons:

     

    I don't really have any:)

     

    I do think in the grammar stage you have to be willing to not accomplish all that TOG offers. I have to leave some of the fun discoveries and activities for later on.:)

  9. I'm trying to map out a rough plan for math. :rolleyes:We are currently using MUS and ds is in 2nd grade and we about to finish up Beta and will start Gamma. I'm trying to figure out where we need to be when. When should we hit Algebra, Geometry, Calculus etc.

     

    I know that our plans could change:D and that we may need to slow down but I thought it might help to have the big picture in mind.:D
