A possible option might be Documents of Freedom https://www.docsoffreedom.org/explore . We switched from Notgrass to Documents and DD is really enjoying it!

We are not world travelers and are about to send DD to Spain for a month. Could anyone recommend a good Universal European converter/adapter? Any travel tips would be appreciated also!

My DD just started Table Class math (and coaching.) The actual tutorials are very reasonably priced and have been effective.

ETA: You don't see the instructor's face, however he narrates the steps. DD didn't care for the sample videos initially, but after one coaching session, she was hooked. I encourage you to check out the free trial.

Oak Meadow's Integrated Health and Fitness course uses the Pollan book,"In Defense of Food." You could combined the course with some Great Courses or additional readings as referenced above to tailor it to your needs.
