mom2abcd Posted January 2, 2010 Share Posted January 2, 2010 Here are some: Layer potatoes. (half of a 20 oz. bag from Aldi) Mix 18 eggs, 1 ½ cup shredded cheddar cheese, 3 cups spinach leaves. Bake 30 min. Top with ½ cup cheese. Bake 10 min. -- 3 c. frozen hash browns 1 lb. sausage 1 med. chopped onion 12 eggs, beaten 2 c. milk 4 c. grated Cheddar cheese Garlic salt Pepper Cover bottom of greased 9 x 13 inch dish with hash browns. Brown onions with sausage; drain and spread over potatoes. Cover with cheese. Mix eggs and milk. Season to taste. Pour over mixture in dish. Refrigerate overnight. Bake 50 minutes at 350 degrees. -- I got this one from Taste of Home, and it is my regular breakfast casserole now. Hash Brown Casserole (Taste of Home) • 12 eggs • 1 can (12 ounces) evaporated milk • 1 teaspoon salt • 1/2 teaspoon pepper • 1/8 teaspoon cayenne pepper, optional • 1 package (30 ounces) frozen shredded hash brown potatoes, thawed • 2 cups (8 ounces) shredded cheddar cheese • 1 large onion, chopped • 1 medium green pepper, chopped • 1 cup cubed fully cooked ham or sausage In a large bowl, combine the eggs, milk, salt, pepper and cayenne, if desired. Stir in the potatoes, cheese, onion, green pepper and ham or sausage. Pour into a greased 13-in. x 9-in. baking dish. Bake uncovered at 350 degrees for 45-50 minutes or until a knife inserted near the center comes out clean. -- * one roll breakfast sausage (I prefer Bob Evans) * 1 bag Tater Tots * 1 cup shredded sharp cheddar * 6 eggs * 1 cup skim milk * 1/4 tsp. salt * 1/8 tsp. pepper Brown sausage to crumble, drain, and let cool. Spray 9x13 baking dish with cooking spray and put in Tater Tots. Put the sausage over Tater Tots. Mix eggs, milk, cheese, salt, & pepper. Pour over sausage and Tater Tots. Cover and refrigerate. In the morning, heat oven to 325 and bake for 40-45 minutes or until cooked through. -- Ham and Cheese Frittata Ingredients 1 Tbsp olive oil ($.10) 1 large potato, peeled and diced ($.15) 1/2 onion, sliced into strips ($.15) 2 cups leftover ham, diced ($1.50) 8 eggs ($.80) 1/4 cup milk ($.03) 1 tsp salt and pepper, each 1/2 – 1 cup shredded cheddar cheese ($.75) Fresh Fruit ($1) Directions Preheat oven to 450. 1. Mince garlic. Using the flat part of the knife, press down on the garlic clove until it crushes. Cut off the stubby end and peel off the skin. Chop with knife. 2. In skillet, saute minced garlic, diced potatoes and onions in olive oil. 3. Once brown, add a few tsp of water and cook another 1-2 minutes. Then add in the diced ham. 4. In bowl, whisk eggs, milk, salt and pepper. 5. Pour egg mixture over the ham, potatoes and onions. 5. Cook over medium heat for 5 minutes, until the eggs have set around the edges of the skillet. 7. Place skillet into the oven and bake at 450 for 5-10 minutes, or until eggs have set in the middle. 8. Add shredded cheese to the top and bake another 1-2 minutes until cheese melts. 9. Serve Ham and Cheese Frittata with Fresh Fruit. Cost $4.48 -- Ingredients 4 slices bacon, crumbled ($.83) 8 eggs ($.80) 1/4 cup milk ($.03) 1 tsp salt and pepper, each 1/2 onion, sliced into circles ($.15) 2 tsp olive oil ($.05) about 3 cups spinach (free from garden) 1/2 - 1 cup shredded cheddar cheese ($.75) 6 pieces of bread ($.40) 2-3 Tbsp (dairy free) margarine ($.20) 3 bananas ($.20) Directions 1. In bowl, whisk bacon crumbles, eggs, milk, salt and pepper. 2. In skillet, saute onions in 2 tsp olive oil. 3. Once brown, add a few tsp of water and cook another 1-2 minutes. 4. Add spinach and cook over medium heat for 2 minutes, until it wilts. 5. Pour egg mixture over the spinach and onions. 6. Cook over medium heat for 5 minutes, until... 7. Until the eggs have set around the edges. 8. Bake at 450 for 5 minutes. 9. Add shredded cheese to the top and bake another 1-2 minutes until cheese melts. (I omitted this, but this is how I've done it before!) 10. Serve with toast and bananas. Doesn't matter if they're the cubed Southern style or shredded. Just cover the bottom of the pan (OH, spray the pan with Pam first). Top that with a pound of diced, cooked breakfast meat. Ham, bacon, sausage, whatever. Beat 6 eggs, 1 c milk, 1/2 tsp mustard powder, salt and pepper to taste and pour that over everything else. Top with grated cheddar and cover, refrigerate over night. Bake for about an hour at 350* **Variations: I sometimes put in diced bell pepper and onion. I cook it with the meat. You could also mix in some salsa with the eggs and top with Jack cheese.
