I got this one from Taste of Home, and it is my regular breakfast casserole now.

Hash Brown Casserole

(Taste of Home)

• 12 eggs

• 1 can (12 ounces) evaporated milk

• 1 teaspoon salt

• 1/2 teaspoon pepper

• 1/8 teaspoon cayenne pepper, optional

• 1 package (30 ounces) frozen shredded hash brown potatoes, thawed

• 2 cups (8 ounces) shredded cheddar cheese

• 1 large onion, chopped

• 1 medium green pepper, chopped

• 1 cup cubed fully cooked ham or sausage

In a large bowl, combine the eggs, milk, salt, pepper and cayenne, if desired. Stir in the potatoes, cheese, onion, green pepper and ham or sausage. Pour into a greased 13-in. x 9-in. baking dish. Bake uncovered at 350 degrees for 45-50 minutes or until a knife inserted near the center comes out clean.

Here's a breakfast casserole I make every Christmas:

Layer an 8x8 pan with frozen hash browns. Doesn't matter if they're the cubed Southern style or shredded. Just cover the bottom of the pan (OH, spray the pan with Pam first).

Top that with a pound of diced, cooked breakfast meat. Ham, bacon, sausage, whatever.

Beat 6 eggs, 1 c milk, 1/2 tsp mustard powder, salt and pepper to taste and pour that over everything else. Top with grated cheddar and cover, refrigerate over night. Bake for about an hour at 350*

**Variations: I sometimes put in diced bell pepper and onion. I cook it with the meat. You could also mix in some salsa with the eggs and top with Jack cheese.

My family loves this and I did make it for a breakfast potluck and got rave reviews.
