We are currently using:
Spelling: AAS
Reading: AAR and lots of read alouds
Grammar: FLL (level 1)
Handwriting: HWT
I should mention my son is dyslexic. I do not enjoy FLL, but he does (probably because there is little writing). For him I like it because there is enough review in there for him.

Have you seen the Truthquest History Guides. Worth checking out-a list of history books with some commentary (from a chritian perspective, but I don't believe all books are christian)

I have the same problem with my almost 6 year old. Do I just shelf phonics for awhile until he shows more interest. His 4 year old sister is sure picking it up, but the "competition" is not a motivator for him.

I just sent them to Kinko's/fed-ex...though I don't think it was the cheapest, but it was easy (this is after I printed them at home and printed front to back all wrong - page 1 was with page 20...duh!)

When you say you can't write it all down...makes me suspect you have a dumper. Is she saying so much, so fast that it just goes on? Is she pretty much repeting what was just read to her? My older son was like that and it could be hard to reign him in. He would retell the whole thing. Our first job was getting him to a place where he understood that retelling isn't narration.
Thank you for all the suggestions. I see I do have a "dumper" and need to reign her in. I also see I needed the reminder of what narration is and isnt.

I'm new here (well not new to reading all of your post :-)
My oldest is in 1st grade and I was wondering how important is it for me to copy her narration. We discuss what I am or she is reading, but I can't write as fast as she talks. So we do narration, but do I really need to copy everything she tells me.
