Calling all cooks -- need help with a recipe substitution

I have a casserole recipe called Kielbasa Apple Bake that calls for, among other things, rigatoni noodles, fuji apples and extra sharp cheddar cheese.

 

Do you think it would still taste good if I used instead elbow macaroni, gala apples and american cheese?

 

I've never put apples in a casserole with cheese before but according to the description it's supposedly yummy, but maybe only with cheddar cheese (i don't know).

Extra sharp cheddar cheese has a very different taste and level of strongness than American cheese so I would not substitute that in a recipe. You want a cheese that will stand up to the sweetness of fruit and the taste of the kielbasa. I think fiji apples are more bitter than gala so you might get it a little more sweet than they were originally calling for. However I don't think the shape of the pasta matters so you can substitute the elbow for the rigatoni as long as it is the same amount.

Can you post the recipe? This sounds good!

 

I'd think the noodles and apples would be fine, but I think you need some sort of cheddar.
