Hey! I just saw this - glad I flipped back to the third page!! So, I made this one up and never really measure- sorry! I hope I can do this right!!

 

Saute an onion and fresh garlic (I use 3 - 4 cloves, but we LOVE garlic!) with olive oil. (Maybe 2 if you're cooking a lot.) Throw in cubed chicken (I usually cook up 2 pounds of chicken) and cook it until it's done. I sometimes add a bit of chicken broth here so the chicken won't burn. Add about 2 cups of chicken broth after the chicken is cooked. Add a bit of tomato sauce - maybe 1/2 cup? (I usually use whatever leftover I can find - spaghetti sauce, plain tomatoes, pizza sauce - you get the picture!). Spice it with curry powder and cumin (to taste). Add 1/2 can of coconut milk (not the low fat stuff - get the good stuff!).

 

I serve it over rice. This usually lasts us a dinner and lunch the next day.
