I make a bar cookie - just a simple mixture of oats (1 c.) , flour (1 c.), brown sugar (3/4 c.), and butter(1/2 c.) and a bit of baking soda (1/4 t.). Put about 2/3 of the mixture in a square dish. Spread apricot puree over it. Top with the other 1/3, bake for about 30 minutes and YUMMY fruit bars! You could make extra - they freeze quite well. Oh, and if you have coconut, mix some coconut with the apricot for a variation. Gotta go! tibbyl Posted February 8, 2009 Share Posted February 8, 2009 Sautee chicken breasts or tenders with a little onion and/or garlic in butter. Add apricot puree and a little bourbon. Simmer a few minutes. Add a little cornstarch mixed in water if need to thicken sauce. Recipe number 2: substitute pork chops for the chicken breasts.
