Pamela H in Texas Posted February 4, 2009 Share Posted February 4, 2009 Okay, I was reading an article awhile back saying that the pizza on the street ages ago was much healthier than the junk food pizza people eat these days. What made it healthier? What makes ours so bad? Is there a healthy recipe you use (or would use)? I don't want just healthier, but actually healthy. Does that make sense? I like both, but they're so different that I wouldn't even consider them the same food type. We make our own pizza crust with whole wheat flour, pureed tomatoes, natural cheese, jar spices (laziness) and then add a small amount of unhealthy pepperoni (that is the only way my kids will eat it). Carol in Cal. Posted February 4, 2009 Share Posted February 4, 2009 And I reduce the cheese considerably. You can get away with this if you use really, really strong tasting cheese. So, for instance, they have one where you cover the pizza crust with drained carmelized onions, and then dot it with blue cheese and chopped fresh rosemary. IIRC, they call for 1/4 lb of blue cheese, and I use about a tablespoon, but I used Treasure Cave (coarsely crumbled and very strong) and spread it all around. It is so good. When I used to make nonfat semi normal American pizza, I used nonfat sharp cheddar cheese, part skim mozzerella, and lots of chopped green onions and mushrooms.
