MomOfOneFunOne Posted January 26, 2009 Share Posted January 26, 2009 1) I wasn't getting the baking done. 2) My daughter loves to cook/bake with me but we never really get the chance. 3) Mondays are always at home all day. We've recently started making a 2 week (vs. week at a time) menu and shopping schedule. I love it; it has been wonderful, et c. but an interesting and unexpected pleasure has resulted. I generally get frustrated b/c I never quite get around to getting the baking done. So, looking at our schedule and thinking of this new way of doing the groceries/menu, I thought we'd try out Monday as baking day. It has just been wonderful. It's a delightful, no-stress way to spend some lovely time together, we both love it, it gets the baking done, it's very motivational for my daughter, and it relieves a great deal of my stress. We're baking bread and muffins (so far) to get all the week's bread done and to have muffins for breakfasts or snacks. The point, though, is that it has been such an unexpectedly lovely time for my daughter and me and it fills a need we have. I just want to say that if you think you can't, give it a try. If you are baking all of your bread for a week on Monday, how do you keep it fresh. My homemade bread doesn't keep well or taste good after a day or two. MomOfOneFunOne Posted January 26, 2009 Author Share Posted January 26, 2009 (edited) JoAnn, I use this recipe http://vegweb.com/index.php?topic=5716.0 with ww flour, honey instead of sugar, knead it (the recipe says it isn't necessary), bake in loaf pans, and keep in it the fridge in a ziplock bag. It's been great so far. By day 7 it crumbles more but it tastes just as nice. I froze one loaf but I haven't tried it yet. I hope it's delicious! I'll let you know about that. Oh, our muffins are great thawed. We made WONDERFUL honey, grape, walnut muffins last week and froze them. They were just as wonderful defrosted and slightly warmed. mmmmm. Today's muffins are pumpkin, chocolate chip. We froze them too but won't know how they did till later in the week. If you use the Artisan Bread in 5 Minutes a Day method, you will have dough that you mix once but can store in the fridge for up to 2 weeks (I think). You can make enough for several loaves of bread, mixing once every 2 weeks, and then just pull out your dough, let it rise a bit, and bake fresh as needed. Did you try putting it in a ziplock and in the fridge? I have some seasoned bread baker friends. I'll ask them and let you know what I hear. Blessings, Angela Sorry about that, Angela, I didn't see your post at first! Yep, it's sugar. If you are a novice, this is a perfect recipe for you. It is super simple with fabulous results! It's the one I use regularly and my daughter says that baking bread is my super power! try it and if you have any questions, let me know. If it hadn't been last-minute haven't-made-dinner barely-made-lunch-today & the kids are starving-baking, it might have been nice to share. Mine are so little, though. I have started letting ds8 help w/ browning meat & small jobs like that. But measuring & stirring are. so. messy. And my kitchen is like a tiny cardboard box. So tiny that we use the oven for counter space & dh has blown up 2 or 3 casserole dishes since we moved here. :glare: Don't know about inviting the kids in to bake. :001_huh: Quote Link to comment Share on other sites More sharing options...
