Amy loves Bud Posted January 16, 2009 Share Posted January 16, 2009 I made some stock from a roasted chicken carcass and...forgot about it while it was on the stove. Fortunately the baby cried during the night and I caught it before it had turned to charcoal. It was reduced to less than 10% of the original volume, but not burned, so I put it in the fridge. You might consider it concentrated and add water when using it (maybe 1/2 broth, 1/2 water) - that's what I do when I make really concentrated broth like that.
