Have we played "what is for dinner" today?

I know that today and tomorrow we are having homemade tomato soup (cream of tomato? I dunno yet) and whole grain rolls as well as Orange Roughy and a veggie stir fry. Which day I'm doing what, I don't know. Probably soup and bread tonight, fish and veggies tomorrow.

Shepherds Pie :001_smile: It is my youngest b'day today and that is what he wants for dinner. He is 15 and wants mom to make his b'day dinner even tho he was offered to be taken to his fav restaurant. We have a huge chocolate cake waiting for him too with vanilla ice cream.

we're having....turkey corn soup, leftovers revamped! ugh.

 

I do want to work seriously at crock pot meals....anyone have some favorites? My favorite easy crock pot recipe is some pork loin with a can of cranberry in the crock pot, add pepper and salt, maybe canned pineapple. SO YUMM! And so simple. Over rice, with steamed broccoli.

I'm making egg rolls tonight, we'll have nachos tomorrow night, a roast on Tuesday, and manwiches on Wednesday.

 

I need to plan ahead better, like this.

 

Tonight we're having shrimp on the barby, because dh loves to grill marinated shrimp. Some french bread, large tossed salad, shrimp over rice, couscous or fettucine.....

I'm not sure what we're having tonight. We had a late lunch at a restaurant today, and it was rather a large meal, so probably something light for tonight. For the rest of the week, we'll probably have chicken fettucine alfredo, baked steak, spaghetti, homemade chicken noodle soup, and whatever restaurant food we can find on Friday night since we'll be staying overnight at a hotel for dd's gymnastics meet.

Well, last week I made chicken n dumplings and Tuscan Beef Tips w/ Noodles (crock pot).

 

Today, I'm making ham & cheese roll-ups (with mac 'n cheese on the side).

 

Tomorrow, I'm going grocery shopping.

 

This week I'll probably make Enchilada Casserole (one to eat, one to freeze), Chicken, and a ham & cheese quiche. Pizza night is Friday, I need to get a handle on food this week.

 

Baby is on the brain... keeps me from thinking straight.

Lefsa with meatballs is on the menu tomorrow night since it is the last day of Christmas.

 

Then I'm planning to have BBQ chicken in the next day or two.

 

Grandma made oyster stew today for those in the family who eat oysters.

 

And since I have leftover rice, I'm going to make chicken 'n rice enchiladas sometime soon.

 

When hubby is out of town later this week, I'll serve stuffed green peppers--he hates peppers.

 

I'm sure I'll make some kind of soup before the end of the week: beef with noodles, chicken with rice, chili, or vegetable...

 

And the day before my ds has his surgery he gets pizza!

How about homemade ravioli? My dear husband pulled out the pasta machine today.

 

Yesterday I made a delicious corn chowder from the Rachel Ray website.

 

I am on a bit of a Rachel Ray kick after searching her website. (Must confess that I have never watched her show.) On New Year's Eve, we had Shrimp Pil-Pil (recipe here) that was incredibly tasty. This dish was accompanied by a homemade baguette. We're on a cooking kick at this house.

We make it around Christmas time every year. Traditionally, it is made with potatoes, cooked and riced. I enjoy making it with potato flakes because we can mix it Sunday morning, and by the time we get home from church, it is cool enough to roll out and bake.

 

It is a lot like a very thin tortilla made with a potato base. We like to roll small meatballs up inside them and eat them like an enchilada. Many people serve it with ludefisk, but I never make that. It is good with warm butter, too.

 

I'll see if I can take photos and put them on my blog when I serve them tomorrow night--we made them a couple of weeks ago. I'd eat lefsa over tortillas ANY day. :)

Thanks Jean! Lefsa is one of those things (like ludefisk) that one hears about on Prairie Home Companion. As a potato lover, I have been curious.

Today I filled the crockpot with porkchops, turkey hot dogs, and sauerkraut. I made a bunch of veggie sides, and that covered dinner tonight, with the leftovers for Tuesday. Tomorrow night will be turkey chili that's thawing now, plus rice and salad. Wednesday I'll cook ground beef to turn into one taco night and two pasta with meat sauce nights, order of meals to be determined by the kids.

Tonight dinner didn't have a title. It was something dh came up with years ago. You saute beets and kohlrabi in butter with lots of garlic. Near the end of cooking time toss in some greens. Tonight I used kale, but sometimes we use spinach or the beet greens. Serve over whole wheat pasta and garnish with walnuts and bleu cheese. This dish has turned many a beet hater into a beet lover!

Tonight I made omelets because I was tired and we need to go grocery shopping. On the menu for the rest of the week is greek chicken over orzo, salmon with brown rice and veggie stirfry, tacos, toasted barely and chicken pilaf, and dh got a sushi making kit and is dying to try it so he'll probably start with california rolls and we'll eat that Friday.

We had Swedish meatballs in sauce, noodles, peas, and brownies tonight. This was my last hurrah with high fat food -- that sauce was made with cream! Little did I know, ahead of time, and I just happened to have plenty of cream left over from Christmas cooking. I don't even recall why I bought it in the first place.

 

Tomorrow we are having scallops, brown rice, salad and broccoli.

 

Tuesday we are having roasted chicken. Wednesday, homemade pizza. Thursday, leftover chicken. Friday, I don't know yet. Maybe tilapia.

 

The seafood was on sale. I don't like it, but DH does, and it's healthy, so I'll eat it. I'll be eating mostly brown rice, vegetables and beans anyway.

I'm eating something beany every meal for the next three weeks. Then I'm going to have a baby, my diabetes is going to disappear and I'm going to eat CUSTARD TARTS!!! Though maybe not for dinner. I don't think custard tarts contribute much nutrition to breastmilk. I'm going to eat grains. Pasta, rice, bread, anything made from grains! I fancy some mealie meal actually.
