math teacher Posted January 31, 2022 Posted January 31, 2022 My mom called this Enchiladas when I was growing up, even though they really aren't. Brown a pound of ground beef. Add 3 cans of ranch style beans and a can of enchilada sauce (or homemade). Serve on fritos or tortillas (I use fritos) and top with cheese, lettuce tomato, onion, and any other toppings you want. I add black olives, corn, sour cream, avocado, but the first four toppings are how I ate it growing up. 3 Quote
mmasc Posted January 31, 2022 Posted January 31, 2022 I love a big pan of what I call “sweet potato hash”. Take a big skillet (with lid) and add some coconut oil. Add in diced sweet potatoes, chopped onions, green & red bell peppers. Sauté for a bit, then put the lid on and cook for a bit for the potatoes to soften. Add a can of rinsed and drained black beans, cumin, salt, garlic powder, and chili powder. Cook it all together (lid off) until it all looks like it has come together, flavored, etc. I either eat it as is, or put some in a bowl and top with a fried egg. (It’s also super delicious as a quesadilla filling with cheese, but I usually try to avoid that 😬) 5 Quote

I would not call it healthy though. Usually with left over fried potatoes. Toasted bread. With mustard. 1 Quote

I learned about that here recently, also. It’s a super easy favorite here now. Also, @mlktwins shared a really easy beefy tomato soup recipe that’s become a new favorite, too! Basically — ground beef, onions and whatever type of pasta sauce you like, some broth. Throw in cooked pasta. So good. Pre-allergies, frittatas were my go-to easy and yummy food. It’s handle for using up small bits of ingredients; especially when your garden is stingy and gives you about 8 snow peas at a time. I can make a meal of cheese toast any time of day, but I’m not sure it qualifies as healthy. I can’t resist it when there’s homemade sourdough in the house. 2 Quote

Years ago I was given a recipe for potato soup: 5# potatoes (not specified but I prefer russets for this) Water just to cover Salt & pepper 8 oz cream cheese. Cook the potatoes till falling apart done - do not drain. Puree with the cream cheese and S&P. It may need to be cooked down more, or a little more water added, depending on how thick you want it. Over the years I have amended it. Well, I rarely use 5# of potatoes - the recipe was given to me by someone with a big family. But now I add about 1 part cauliflower to 2 parts potato, maybe more. I never add as much cream cheese as stated. Probably a third of what's called for, proportionally. It's def a recipe to play around with. People add different thing according to their desires: bacon/facon, green onion, red onion, pickled jalapenos, cheese are the things I can think of now. I sometimes add some cooked greens into mine. 2 Quote

Laura Corin Posted January 31, 2022 Posted January 31, 2022 Inauthentic miso soup. Boil frozen edamame beans lightly, reduce to a simmer. Drop in finely chopped Chinese leaf. When tender stir in miso paste to taste. Add scallions and cubes of silken tofu. Don't stir, otherwise the tofu will fragment. Serve with chopped cilantro. If you want it to be more substantial, cook noodles with the edamame. 1 Quote
