Vegan options welcome, but no coconut. (We are also GF, but that shouldn't be an issue.) A fairly thick texture is nice. I will also be glad to have recommendations for store-bought, but it must be available in my area (central NC), no food coloring, and explicitly marked GF either on the bottle or the manufacturer's website (not the store's) so I know there's no barley in there, especially with natural flavorings. Make sure to beat the yolks until they’re fluffy and pale - you can do this with a bain marie. Warm egg yolks will give you more volume. This eggnog is so much better than anything you will find in a store. Kids love it, adults love it (spiked). I’m with the kids on this one, though, not being terribly keen on booze. I don’t thin it with anything, just remove some for the non-drinkers and add some booze to the rest. I don’t find it too thick, but one could always add milk or cream. It is very rich and delicious. I have tasted it with booze (adjusted for what remains) and find it way, way too strong. So if making the original recipe, it wouldn’t be a bad idea to add the booze gradually and to taste until you get to the sweet spot. 1 Quote

I can't find it listed marked specificallty gf, and it has mystery ingredients like "spice" and "natural flavor" that could be barley. 73349 Posted December 28, 2021 Author Posted December 28, 2021 UPDATE: We used this recipe and liked it a lot. 1) Beat separately yolks and whites of 6 pasteurized eggs. (We used Davidson's, which are sold at Harris Teeter.) 2) Add 1/2 cup of sugar to yolks while beating. 3) Add 1/4 cup of sugar to whites after they have been beaten very stiff. 4) Mix egg whites with yolks. 5) Stir in 1 pint heavy cream, 1 pint whole milk, and 1 tsp. vanilla. Transfer to a large glass pitcher (~2 quart). Serve cold, with ginger ale if desired. Sprinkle each serving with nutmeg. So if you want to drink eggnog at New Year's, I recommend this recipe. 1 Quote
