Hearty healthyish soups?

Recommended Posts

Now that it is just dh, 13 yo dd, and me at home (and the three young men who did think soup was really a meal have flown the nest) I am wanting a couple new soup recipes. Our schedule has her dancing every night and our favorite meals to come home to are some tasty soup in the crock pot and throwing some kind of bread in the oven to have warm with it (usually frozen dinner rolls or a Jiffy cornbread mix).  It's and easy comfort meal at the end of a long day. It doesn't have to cook all the way in the crock pot. I can cook early afternoon and just leave it in the crock pot staying warm. Dh and dd really require some kind of meat to fill up and while beans are acceptable they don't want straight up beans. Beans as an ingredient is good, beans as the main component is a no go.

But I need some new ones to try. These two are in our steady rotation:

(this is healthyish to me...yes it has sausage but it also has some good stuff in it and it isn't something like macaroni and cheese soup that is made with two pounds of Velveeta- so that is kind of the standard on healthy 🙂 )

Any others I can throw into the rotation? I really hate cooking and cleaning up for late dinners. But we all still like something warm and homemade.

I tend to just kind of throw things together for soup, so I don't necessarily have directions with the ingredients.

I no longer tolerate quite a few of these ingredients, so I am not sure about exact measurements--it's been a while since I made these, but they are very forgiving.

This one is really hearty:
Roughly equal amounts of red lentils, brown (or green) lentils, yellow split peas, green split peas, brown rice, and wild rice as the base. Add matchstick carrots (or you can slice/dice some), stewed or diced tomatoes (or sauce if you don't like chunks), and meat of your choice (chicken or kielbasa were our go-to choices). Oh, and cook it in chicken broth. ETA: salt, pepper, and spices of choice...we like a bay leaf and maybe rosemary and thyme (you'll see a theme, lol!),

We also really liked cranberry beans and kielbasa. Or navy beans/ham/carrots with rosemary, thyme, bay leaf, salt, and pepper.

White kidney beans with petite diced tomatoes, choice of greens, cooked in chicken broth with chunks of chicken. Add a spoon of pesto to each bowl when you serve it.

We do variations of tortilla soup--depending on what ingredients we have on hand--

Chicken stock and shredded chicken; sauteed onions, bell peppers, can of black beans (rinsed), can of corn, tomatoes--fresh diced or canned or Rotel tomatoes, Picante sauce.   May add chilli powder, cumin, salt to taste (depending upon how seasoned chicken stock is); sometimes add canned green chilis if fresh tomatoes are used.    Place a few tortilla chips in a bowl, ladle soup, and top with a bit of grated cheddar cheese; can add a dollop of sour cream and sliced avovado.  Holds up well in a crock pot and freezes well.

Couple of favorites that come to mind:

Posole verde with chicken,  https://www.bonappetit.com/recipe/posole-verde-with-chicken

Cabbage and farro soup, https://smittenkitchen.com/2019/01/cozy-cabbage-and-farro-soup/    I have added some waxy potato to this with good results.  White beans would be a good addition. Could toss in some cooked chicken or sausage. (I generally use chicken-based, not pork-based sausages with good results.)

Another cabbage and white bean soup, https://www.thekitchn.com/recipe-the-easiest-most-delicious-cabbage-soup-254146

Tortilla soup, https://damndelicious.net/2018/11/02/instant-pot-chicken-tortilla-soup/  There are a million tortilla soup recipes, but this is my favorite so far.

Avgolemono, https://www.foodandwine.com/recipes/avgolemono-chicken-soup-rice   Another soup with a million different recipes.

Have you tried this Broccoli soup from Life in the Lofthouse?

https://life-in-the-lofthouse.com/broccoli-cheese-soup/#view_recipe

I just chop the veggies and then use an immersion blender to blend after they have cooked.  I usually double the recipe but leave out the cheese and keep the original amount of half-and-half.  So good!!  Be liberal with the bay leaves -- they give SUCH a good flavor!

beef barley soup is another very hearty soup.

ham and potato

if I'm short on time or feeling lazy, I will take a box (or 2 or 3) of broth and just dump in frozen potstickers/dumplings from the asian food frozen food section and maybe some onions.  Makes for a tasty quick soup.
