Dd will be in 8th grade next year and likes to work independently. I would like to give her a schedule, or curriculum manual, just like the one Memoria has produced, but with my own curriculum. Is there a program I can use to make this?

It's been a few years, but I used Homeschool Planet .  There was a cost to it, but it was pretty easy to use and whatever wasn't finished  was easy to move to another day/week.

I used Microsoft Word to make something almost exactly like that for my oldest this year. 

Here's a picture of it while I was creating it on my laptop

Same here.  Some years I've just used spiral notebooks, since we are on a somewhat unusual schedule, but if I can find a workable paper planner I prefer that.

This is currently my favorite planner.  Teacher Planner  The cover is actually a hard plastic folder, so the kids can take out the cover and replace with any picture they want.  The paper is high quality.  

OP, when I am creating my kids' planners (I create 1 per student), I prefer days going down on the right with the subjects going across the top.

I've also created similar things with tables in Words. Excel has some functionality Word doesn't have - but I have a rather tense relationship with Excel. We just don't get a long well.  Ha ha!. 

I've been into using Trello this past semester though. It's really cool way to create a visual kind of checklist. You can include images (like book covers) and links to YouTube videos or PrimeVideo or whatever directly in the Trello list, which is awesome for me. And it's super easy to move things around when/if needed. There are quite a few Trello tutorials for homeschooling on YouTube which helped me visualize how to make it work.

I use Canvas which is free. It is a full learning management system so you can keep it as simple as a course to do list with or without due dates or as complicated as turning in all assignments, giving online auto-graded quizzes, and grade tracking.

I'm jealous of you who can use excel! I am so not good at these things. I have a very disorganized brain. Trello has such a nice layout, but I NEED a physical copy.

You might find writing out by hand your best fit.  Writing it out physically helps me solidify in mind what we are doing and where we are going.  Typing on a screen does not connet me to a calendar the same way working in a physical planner does.

I make a weekly schedule using a table on Google Docs, then print it out the week before for my son.  I preplan some of his work in another document (similar to the MP digital subject lesson plans) so I can just cut and paste from that.  If I need to make a change, I can either edit and reprint or just cross out with pencil and write in the change on the page.  I keep the page on a clipboard on his desk and change it every Sunday.  The old ones go in a folder (in order) in case I want to check what he did on previous weeks.

I print out the parts I need. I have one master spreadsheet with everything scheduled out. Then I print out two week chunks for each kid— it serves as a daily  checklist for them. I file the completed checklists abs scan then at the end of the year.  So every two weeks, I’m adjusting and tweaking and printing out paper copies
