We're in a rut. Trying to fix diabetes friendly food without dairy in it.

 

We've done some cooking a protein and veggie one day and then spaghetti the next while the person with diabetes eats the leftovers from day one. (But often only the protein gets warmed up and eaten -- not the veggie)  Then making something with dairy and the dairy intolerant one continues on the spaghetti. Etc.  ANd we recently tried Zuchini Noodle Carbonara and enjoyed it (but the noodles were pricy)

 

So more ideas would be nice!

(If they are teen friendly that is a bonus because I also need to make a meal for a group of teens, one of which has diabetes)

You could try searching for keto dairy-free recipes. They would be very low carb. Most of the keto recipes that are coming to my mind have dairy, but I’ve definitely seen dairy-free recipes/sites out there.

You can use riced cauliflower in place of noodles or rice too.

You can buy a spiralizer tool to make zucchini noodles yourself pretty cheaply. Or just cut them thinly with a knife. 

You can use lettuce or collard greens in place of wraps & breads.

You can use theme nights to come up with menu ideas.

Get a spiralizer as Katy said. You can make your own zucchini noodles (Zoodles) and also other vegetables like Butternut Squash noodles, sweet potato noodles and jicama noodles.

I use a food processor to rice both cauliflower and broccoli and use them in rice dishes - mexican rice and indian pilafs turn out well enough using the riced cauliflower/broccoli mix that we don't even notice the difference.

Add more nuts, seeds, Legumes and beans to the diet.

Stir fry's without rice.

taco salad without dairy or else use a non-dairy "cheese" on top (I usually leave it off but some of them aren't too bad especially when mixed with everything else.

Grilled meat and roasted veggies.

Sheet pan dinners (again - protein and veggies - some can be starchy veggies but watch amounts depending on how sensitive the diabetic person is to carbs)
