popmom Posted February 2, 2021 Posted February 2, 2021 (edited) I finally got a book about CFS/ME that was recommended by someone on this forum (I think) and started reading it. The book recommends a keto diet. I tried keto several years ago, and I couldn't stick with it. It was a high protein/moderate fat plan, and I just could not meet the protein requirements. This time I'm eating more fat than protein, and it's much easier for me. The other keto plan I was on also strongly discouraged "keto-fied" foods like keto bread etc. That also made it difficult. I'm giving myself permission to have some of those type foods this time around, so I would love to see some of your favorite recipes for keto friendly ways to have a sandwich occasionally--or a tortilla type thing. I don't miss desserts, so I'm fine there. I've never had a sweet tooth. I'm on day 5. I'm supplementing electrolytes with bouillon, lite salt, and Natural Calm--although I've felt kinda crummy today. Amy Gen Posted February 2, 2021 Posted February 2, 2021 We mix eggs and finely grated cheese and cook in the waffle maker to make a low carb bread. It freezes well and at least you know it doesn’t have any extra undesirable ingredients. 2 Quote
Martha in GA Posted February 2, 2021 Posted February 2, 2021 There are many recipes for bread that use almond flour. I became sensitive to nuts, so I tend to use coconut flour now. I like the "Low carb keto hamburger buns recipe" from Wholesome Yum. 1 Quote

Pen Posted February 2, 2021 Posted February 2, 2021 I found keto ideas from Mercola helpful He has a plan where one does keto with gaps, not all the time, and that takes care of how to have a sandwich one way by just doing it in an off keto gap. other ways can be things like using one of those enormous mushrooms instead of bread I got to where I am keto - ish and don’t have to think about it as much 1 Quote
mmasc Posted February 2, 2021 Posted February 2, 2021 (edited) I don’t know anything about Keto diets, but I have been buying this bread bc of the protein and fiber content. I noticed it said keto on it. It’s pretty good! I mean, you can tell it’s not regular bread, but it’s good for what it is. 😊 Ive also noticed my store has cheese wraps. They look like tortillas, but are made from cheese. I haven’t tried them yet, but they look tasty! eta: I’ve seen the cheese wraps at several stores, not just aldi. I was buying them in Costco. Put them in the oven for a wonderful taco shell. 2 Quote
Forget-Me-Not Posted February 2, 2021 Posted February 2, 2021 DH and I have been Keto (with a few special occasion breaks) since June. I really like the Mission low carb tortillas. They’re 4g each. We like to fry them occasionally, or we brush them with olive oil, crisp them up in the toaster oven, and then put pizza toppings on them. I also really like the Artisan Bakery keto bread which is sold at my Costco, but you can’t get it everywhere. I think it’s mostly distributed on the west coast. IME steer clear of the Franz keto bread products, unless you enjoy eating sawdust as a general rule. That being said, I would caution you that a lot of people find the keto-fied bread products stall weight loss, if that’s your goal. I try to limit them to once a week or so. We mostly try to replace bread with veggies in our meals. Instead of a taco, we put all the fixings on a salad instead. Or we have a burger wrapped in lettuce. 2 Quote
Frances Posted February 3, 2021 Posted February 3, 2021 (edited) I’ve done keto very successfully a few times for quick weight loss, but never tracked anything. I use the Multigrain Flatout wraps for wraps and individual pizzas. I only use a half one at a time. They don’t seem quite as readily available now as previously, not sure if that is pandemic related or something else. Edited February 3, 2021 by Frances 1 Quote

I was thinking it would be better to go over on my calories occasionally rather than kick myself out of ketosis. All I’ve eaten so far is meat and veggies. Almond flour is very calorie dense, so I will be using it sparingly. Also, it’s crazy expensive! Quote
