TechWife Posted January 18, 2021 Posted January 18, 2021 I am looking for a unique muffin recipe for a virtual tea that I am hosting. By that I mean not the most common ones. I’m looking for something other than banana, blueberry, choc chip, etc. A dollop of filling might be fun. I’d like to be able to freeze them so I can make them ahead. Also not too crumbly - I’m hoping to put them in gift bags with the other items for the tea to be delivered to the attendees door the day before the gathering. Also, does anyone have a good, easy to carry out soft pretzel recipe? I’m wanting to try my hand at them. Thanks in advance! Quote

TechWife Posted January 18, 2021 Author Posted January 18, 2021 Oh - Cheese straws - are these hard to make? So - some backstory. I teach a weekly Bible study. We have been meeting by zoom since March, so nearly a year. Almost everyone is local, but there are four people who have moved away during the pandemic that are attending from anywhere from two hours to two states away. We usually get together a couple of times a year outside Bible study, normally at Christmas and at the start of the summer. IWhen we finish our current course in April, I want to have a virtual tea break together. I got this idea from "attending" a virtual cocktail party where I had a small cooler delivered to me w/cocktail ingredients & food. So, I want to adapt it. I would like to make the food because of the expense. I need to make a total of 15 packages. I have some white gift bags that I can use & will probably decorate them somehow. For the people who are out of state, I will need to mail their packages to them about a week ahead of time. So far, I am thinking of including: a mug two tea bags (I may custom make these with some pinterest ideas, or just spring for the pyramid shaped ones on Amazon) a muffin cheese straws small fruit for local peeps (maybe a small bunch of grapes) nuts (almonds or cashews) I may include a small fancy plastic plate, I am not sure So - I want to make the cheese straws and the muffins. The pretzel recipe I requested is just for my fun. Does anyone else have recipe ideas for me? 2 Quote
saraha Posted January 18, 2021 Posted January 18, 2021 (edited) https://www.tasteofhome.com/recipes/apple-pumpkin-muffins/ I make these muffins twice a month, in the summer/fall I substitute cubed zucchini for the apple since it is free from my garden. They are heavy and moist and very flavorful. I don't have any fancy pretzel recipe, just use one I found on the internet, they are all pretty close to the same. Try any of them, soft pretzels are good! https://www.onceuponachef.com/recipes/soft-pretzels.html I don't know anything about cheese straws Edited January 18, 2021 by saraha Quote

The pretzel recipe doesn't seem like it would be too hard for me to execute, either. Thanks so much! 1 Quote
4atHome Posted January 21, 2021 Posted January 21, 2021 This recipe is good. I think I heaped the yeast measurement. https://www.allrecipes.com/recipe/161586/papa-drexlers-bavarian-pretzels/ It's one of at 15 recipes that I have in my 30 open tabs. I'm meaning to add these to my hard copy recipe book. I also have 4 tabs with classical reading lists. I really need to reduce the tabs. Quote

It's basically grated cheese, flour, butter and often cayenne or paprika. We usually put the dough in a cookie press and just squeeze out long lines of dough, often making a snake back and forth across the cookie sheet -- it doesn't matter how long it is. After they bake, you can break them into pieces. This recipe looks very similar to the ones we make. https://www.pauladeen.com/recipe/cheese-straws/ Quote
