Would you eat this?

I have a large (expensive) beef brisket that has a sell/freeze by date of 11/21.  I mistakenly read the date as 11/27 and pulled it out today and noticed the difference. 

It's still in the original vacuum packaging and my fridge temp is a consistent 37 degrees. I would be cooking this in a low oven--250 degrees.

Vacuum sealed? Yes, as long as it doesn’t smell funky when you open it. Large cuts of meat like that are far less prone to contamination than ground meats.

It might smell funky when you open it, but if it still has a horribly strong smell after 30 second or so, then I would think twice.

Yes!  I haven’t noticed it with brisket, but for whatever reason vacuum packed pork butt can smell suuuper funky at opening, but the smell dissipates fairly fast.
