It is really hard right now to plan desserts because they need to be single-serve, pick up and go, and I'm SO over plastic wrapping 25 pieces of dessert. I wear gloves and both a mask and a face shield, so that I'm not breathing on people's food when I have to handle it. (I don't actually touch the food.) I have a nice collection of small glass single-serving dishes that I could bake or water-bath bake food in. Think individual flans, or choc puddings, or such. Ideally they would come out of the oven, or the pudding stuff would be poured hot into the dish. Basically once cooked, I wouldn't handle the food, except picking up the exterior of the glass. We usually do several flavors, usually chocolate, something acidic (fruit or citrus) and maybe something nut or spicy like pumpkin. Can anyone point me toward some recipes for single-serving desserts you like, preferably stuff you've made and know it's good? :-) Thank in advance! Quote
athena1277 Posted November 8, 2020 Posted November 8, 2020 I would think that collecting 25 dishes after would be a bigger pain than wrapping desserts. My solution would be to either buy those disposable baking tins to use or make cookies and put them in ziplocks to pass out. 1 Quote
Danae Posted November 8, 2020 Posted November 8, 2020 I have done individual cheesecake, chocolate pots de creme, and creme brûlée in 8 oz mason jars. I cooked them souse vide, but I’m sure baking in a water bath would work. 2 Quote
Bambam Posted November 8, 2020 Posted November 8, 2020 I'd be tempted to do pumpkin cheesecake with a ginger snap cookie as the bottom crust. I'd use the muffin/cupcake liners and just put them in baggies. Or can you just sit them on one big platter so they aren't touching? or I'd do some sort of cookie with icing - again baggies. What something a little fancier? Make cookie sandwiches with the icing the middle. If you wanted to mess with the glass dishes (transporting plus gathering/washing/etc), I'd consider a mousse. Easy and yummy. If you are okay with baggies, a pumpkin roll with some sort of cream cheese icing type thing inside would be seasonal. Personally, I'd go get those disposal clear cups and use them for banana pudding, or mousse, or something like that. But I like easy and fast desserts. Or I'd suggest the company consider ordering individual brownies from Chick-fil-A. 2 Quote

Eh, it's something I've wanted to do for a long time, and I can fill the sink in the conference room with hot soapy water, and just let them soak. I'll use clear plastic disposable spoons. I already have all the little dishes, and they'll be cute. (I'll bring a dishpan to collect them, and when I get home, I can germicide them for good measure.) 1 Quote
