prairiewindmomma Posted November 5, 2020 Posted November 5, 2020 We have an abundance of 2% milk right now that we need to use up in the next few days. Ideas? Quote
Pen Posted November 5, 2020 Posted November 5, 2020 Or freeze for in case out later on? It doesn’t melt out exactly like fresh, but better than powdered 1 Quote
Ausmumof3 Posted November 5, 2020 Posted November 5, 2020 Creamed rice. Custard. White sauce. Freeze it. Banana smoothies. 1 Quote
mathnerd Posted November 5, 2020 Posted November 5, 2020 1: Make yoghurt. 2: Make paneer cheese: it is the easiest of cheeses to make. The internet has tons of recipes. 3: Cook with it. I make waffles, pancakes etc that call for milk when I have an abundance of milk that is close to expiry date. Quote
KungFuPanda Posted November 5, 2020 Posted November 5, 2020 (edited) I usually do yoghurt, breakfast gravy, or rice pudding. My MIL’s rice pudding recipe uses a half gallon of milk. ETA cheese Edited November 5, 2020 by KungFuPanda Quote

Junie Posted November 5, 2020 Posted November 5, 2020 I feel like I've never had this problem... What to do with an abundance of milk? Find a teenage boy. That's all I've got. 😉 5 9 Quote

Kassia Posted November 5, 2020 Posted November 5, 2020 I was also going to suggest pudding or pancakes. You could freeze the pancakes. Freezing the milk as someone above suggested is also an option. Quote
KungFuPanda Posted November 6, 2020 Posted November 6, 2020 . . . You'll find milk and I'll find flour And we'll have a pudding in half an hour . . . 1 1 Quote

prairiewindmomma Posted November 6, 2020 Author Posted November 6, 2020 My teen boys are no help with milk, unfortunately. I have made ricotta, but not paneer. Does anyone have a good tutorial link? 1 Quote

Does anyone have a good tutorial link? You boil the milk and add an acid to it (traditionally lemon juice or vinegar) and stir. The milk curdles and then you pour it through a cheesecloth and shape the cheese. I save the whey and use it as my liquid in soups. So, no waste. Any paneer recipe will work. Pam in CT Posted November 6, 2020 Posted November 6, 2020 Put some lemon juice in it to make fake buttermilk -- it'll keep for another week+ like that, and you can use it for scones. Of course you'll have to get heavy cream to go with the scones, If You Give A Mouse a Cookie-like... 1 Quote
MercyA Posted November 6, 2020 Posted November 6, 2020 Egg casserole, waffles, pancakes. (Are you seeing a theme here? I love breakfast food!) Quote
wintermom Posted November 7, 2020 Posted November 7, 2020 Have my 2 teen boys over for the day. They'll use it all up! 🤣 I NEVER have an abundance of milk. Quote

And yogurt lasts longer than milk (though how much longer I don't know) and can be used as in place of buttermilk and sour cream in many recipes. Quote
Tanaqui Posted November 7, 2020 Posted November 7, 2020 Sorry, that joke didn't land. I know yogurt is super easy to make, what I meant is "Why make something healthy like yogurt when you could make brownies?" Quote
Carol in Cal. Posted November 7, 2020 Posted November 7, 2020 Homemade tomato soup uses a lot of milk, as does homemade butternut squash soup, and either one can be frozen in pint sized canning jars—if you use the wide mouthed ones it’s easy to thaw just the edge and slide the block into a pot to reheat later on. marbel Posted November 7, 2020 Posted November 7, 2020 This is a total aside: I do not recall ever using milk when making brownies. 😄 But I do bake a lot of delicious treats using yogurt, lol. Quote

Pour the milk into a glass and hand to the afore mentioned teen boy along with a slab of brownie. Also works with cookies or pie. Scalloped potatoes, homemade mac and cheese, custard, pudding 1 Quote
