I like the rolling log over a 5-gal bucket for mice.  (alterations are required for squirrels or rats)  We bait with peanut butter.  one person used a swim noodle as a ramp for them to get to the top of the bucket (to reach the "log").

we had a mice infestation in our garage, and barely caught any with snap traps, glue traps, or poison bait  (we even had a couple get into something where they couldn't get out, and starved to death.  And stank up the garage (we eventually found their bodies). . . .

with the rolling log on a bucket, we had 30 mice in a six week period.  I think we got them all, as we didn't have any for months after that until spring came around and the garage door got left open.  Then over a period of several weeks, we caught two more.

If they are between floors I would call a wildlife extermination/control company.   They will be able to identify the animal, get them, and also find possible ways they are getting in (and fix the issue).

I'm glad this works.  I am terrified of one dying and us not being able to find it!!

For mice- I set traps on each floor with Nutella.  They will come out for it.

Ooo, good idea!

We may go this route.  I may bait for a night, but I'm afraid it may warrant calling a professional.

One of the many advantages of calling a professional initially is that they will also look for damage the animals may have caused.  Once you get the animal identified,  points of entry sealed, and trap/get rid of any animals in there now, then it will be easier for you to use traps or whatever and keep them out/under control.  But having a professional initially is going to save you more headaches.  If they were in your garage it may be easier to deal with yourself, but between floors (or in attics) is tough.  They multiply quickly and can just cause so much damage.  It is both gross and sickening.
