I make pizzas every Friday night but so far, I have always used marinara sauce as a base. I have really wanted to make a Greek-like pizza, but I don’t really know what I’m doing instead of a marinara sauce. Do I just brush it with a good Olive Oil? If I had some spicy oil, I would drizzle some on, but I don’t. 

For the rest of the toppings, I have: Feta cheese, banana peppers, olives (black, green and/or kalamata), roasted red peppers...oh, and I think I have a jar of sun-dried tomatoes. My main question though is what I do instead of sauce? Brush on olive oil?

We do a greek pizza regularly. Your toppings are great. The only different thing I do is infuse the olive oil with garlic and some spicy peppers before brushing it on. Combine crushed garlic cloves and peppers with some olive oil. Heat through and let sit until cool. Strain and brush. Not authentic I'm sure, but really tasty.

We make a Mediterranean pizza - olive oil with just a little red wine vinegar, baby spinach torn in pieces, roma tomatoes de-seeded and cut up, feta cheese, sliced olives - all mixed together. Add some Italian or Greek Seasoning. Add in whatever meat you want (we usually don't have any). Yummy. I use Naan bread for our crust vs. traditional pizza crust. I do spray the Naan lightly with olive oil and toast for a few minutes before putting the rest of the stuff on. I bake @ 400 for maybe 5 minutes.

This is the recipe from my Greek friend that I use all the time: brush crust with olive oil, sprinkle Greek oregano (fresh if you grow it or regular dry one if that is what you have), basil, thyme, red onions, tomatoes, bell peppers, kalamata olives (from Trader Joe’s) and a mixture of mozzarella and feta cheese. That is pretty much the basic version. I am vegetarian and I stop at that. But you can add meat toppings to it as per your liking.
