Jann in TX Posted September 15, 2020 Posted September 15, 2020 What I make almost every week: Creamy sweet potatoes-- add about 2 cups water, place metal trivet inside, add washed sweet potatoes (cut in large chunks). Cover and cook 16 minutes. Let natural release about 5 minutes. They are soft, fluffy and perfect for homemade baby food (primary purpose) or yummy side dish. Whole chicken-- rinse chicken and place breast down. Add 2 cups water. Top with onion (minced or sliced), some good shakes of poultry seasoning, maybe some garlic and cook for 30 minutes (up to 35 minutes if it is extra large). Manual or natural release, drain and reserve stock for soup. Meat will be 'falling off the bone'. Use for enchiladas (yum!), pastas, sandwiches, salads, snacking, great for pulled chicken BBQ sandwiches too. I make soup in the IP or just in my soup pan... let stock settle and remove the fat then pour in pan and add lots of fresh veggies and some salt, pepper, cumin, basil (just about anything you want!)-- I might even add in some chopped cooked chicken... I love making cheesecake in the IP-- but make sure to change out the seal. I have a pretty blue seal that I only use for desserts (seals tend to hold flavors and garlic cheesecake is not appetizing! I also make a lot of beans-- black beans, red beans....super easy. Pulled pork is awesome.... take cut up pork butt (or better yet carnitas (end cuts) and place inside. Add 1.4-2 cups water and a good shake of BBQ sauce (I also add onions too). Cook for 60 minutes. Drain off most of the liquid and pull apart. Add additional BBQ sauce as desired. Quote
Emba Posted September 15, 2020 Posted September 15, 2020 Hard boiled eggs - pressure cooking makes the shells peel off easily. Rice pudding with raisins - we call it spotted pup. I like this recipe: https://www.happyfoodstube.com/instant-pot-rice-pudding/ Beans - mostly pinto, but occasionally others all kinds of soups and stews I would think of things she likes to cook, then look for recipes of those things for the instant pot that will save time and effort. Just google “that food, instant pot recipe”. but it didn’t do a lot of good with my mom. Part of it may be that she’s only cooking for two most days now. My sister and I got my mom an instant pot a year ago, and I think she’s used it twice. Sigh... I try to make recipes in my instant pot when she’s over, so she can see how easy it is and what kind of things you can make. There’s a saying about old dogs and tricks that might apply here, though. 1 Quote

Yes, she hates new gadgets, but her bff raved about hers so much she wanted one. She told my sister she wanted one for Christmas last year and never even opened it. Neither her bff or my sister (neither not which have kids OR a job) have bothered to help her. She mentioned from time to time, so I took the initiative to help her out. I have this suspicion if I try it for a week and tell her all the things I made, she'll probably end up telling me to keep it. That is 100 % her style. Quote
