While we'd all love a delicious treat for the first day of school, none of us will want to eat pastries or other sweet foods.  Any ideas for a healthy and satisfying alternative?

Trail mix bar! Put out different kinds of nuts, seeds, banana chips, coconut, dried fruit, chocolate chips (if desired), etc. and let everyone make their own mix.

Quick bread (pumpkin, zucchini, etc.)

Special breakfast? Whole grain waffles or pancakes with real maple syrup?

I . . .  do not understand, but I will try to help nonetheless. 

There are plenty of fancy/special breakfasts that aren't sweet: shrimp and grits, eggs Benedict with toasted English muffins, sausage gravy with biscuits, frittatas, omelets, fancy fruit bowls, avocado toast, savory bread from the bakery. 

Fancy glasses for the juice or milk, tablecloth, decorations.

Popovers. Man do I love a popover for breakfast, but very rarely make them because I have to get my slug-like self busy making a baked good early in the day.

Is this kind of like a scone? I'm very confused, never heard of these before!

Better Homes calls them, "crispy, hollow puffs" and likes them for appetizer, salad or main course.

A few pages earlier they have French Breakfast Puffs, which are like for muffins without the fruit, but sprinkled with cinnamon sugar. Yum, sweet, but not decadent.

Crispy and hollow, yum! Hmmm, maybe like a choux pastry, like a savoury profiterole? Might try it tomorrow!

 recipe, the French one is delish but not crispy or hollow. Drool. I may have to work those on tomorrow myself.... 😄

Pretty much like a choux pastry or a savory profiterole. If you put some butter or jam on straight out of the oven, it is like a food of the gods.
