Lima beans and rice with left over ham.  I had so much ham left over from Easter because we couldn't have guests.  We usually have a big group. I took it out of the freezer this morning.  :)

Takeout!

We usually eat out after church, but online church doesn't last as long as regular church, lol, and the Mexican place we wanted wasn't yet open when we wanted to eat. So leftovers for lunch, Mexican for dinner!

It was supposed to be ham and bean soup, but I forgot to put it on in time.  We are now going to have reheated ham, roasted potatoes, and asparagus.

Pot roast with those tiny potatoes, carrots, onions, and green beans.  Homemade gluten free buttermilk dinner rolls (from the GF Artisan Bread in 5 book, never made these before).  Maybe some baked apples, so I can use up the rest of the maple glazed walnuts and the can of whipped cream.

BBQ pork butt that's been in the crockpot since last night; homemade NC BBQ sauce (the hot vinegar stuff); and fancy macaroni and cheese.  If anyone wants healthy, they can make a salad, but I'm good without!

I'm actually making dinner, which is a rarity these days. Combine the facts that everybody in my house functions on different schedules these days, I don't have a ton of interest in food if I have to think about it or work too hard to prepare it and my general lack of energy or enthusiasm for much of anything . . . and meals are very much catch-as-catch can and involve a lot of convenience or grab-and-go foods.

However, I got my act together and current have a tray of veggies roasting. Some nice big baked potatoes, plus tomatoes and garlic drizzled with olive oil and seasoning and a new experiment of baked onions. 

I happened across this recipe a week or two ago and printed it out to save for later. My husband found the paper on the printer and strongly hinted that he would be very happy to see this item make an appearance in our kitchen.

Roast beef in the crockpot.  (Chuck roast in pot, sprinkle on 1 package of Ranch dressing, sprinkle on 1 package of Au Jus mix, 1/2 stick butter, 5 peperoncini from a jar. 4 hours on high, 8 hours on low.  I normally hate beef. This is the only beef recipe that I actually enjoy.)

Frozen mixed veggies.

Roasted potatoes with onion and garlic

 

(And I’m craving some pancakes, so maybe a little pancake for dessert later.)

We just put a homemade mushroom, roma tomato, ground beef, mozzarella home made pizza in the oven.  I make the dough, sliced mushrooms and tomatoes, and cooked the ground beef.  DH rolls out dough, make sauce, and puts on toppings.  We will have spring salad from a bag with store bought dressings because between making bread, making pancake batter and this pizza, I am done for today.

Tomorrow will be grass fed beef tenderloins I found frozen, homemade bernaise sauce, frozen veggies of some sort (or maybe fresh if I do instacart order) and either potatoes or maybe spaetzle.

Lunch: Pizza! First take-out in 19 days. 
 

Dinner:  Burritos from taco night leftovers.

A day off from cooking was pure Pandemic luxury. 
 

I DID make some brownies, but my punk kid claimed it wasn’t dinner.

Everything here is delivery or curbside pickup. We just picked it up and ate at home.

Chef John’s Juicy Lucy hamburgers from the latest Allrecipes magazine. They were pretty good. And I made oven roasted potato wedges, too. I am getting good at making those.

My macaroni and cheese last night was a Chef John recipe! I like a lot of his stuff. Off to look at the Julcy Lucy burgers!

Red skinned potatoes cut in thirds (big ones) and cooked with butter and some Mrs. Dash chicken grilling seasoning in the instant pot. Green beans sauteed with the same seasoning and yes, some butter, in a cast iron skillet. We like our green beans southern style (aka overcooked and soft) so I covered them with water, added a few pats of butter and the seasoning, and brought to a boil, then simmered until the water had evaporated.

Then I sliced up left over baked chicken breast and put that and the potatoes on a sheet pan coated in olive oil and sprinkled some cheese and a bit of torn up bacon on top. Broiled for a few minutes until cheese was bubbly and browning and chicken was warmed up. Served with the green beans. YUM! It was really good, and super easy. I had never used that seasoning blend before and it was surprisingly good - DH has to watch his sodium so going to be using more salt free seasoning blends.

(and yes, everything had butter and olive oil. My cholesterol is perfect, edging toward low - so I use butter and don't feel guilty!)

We had instant pot beef bourguignon, I planned to make it the old fashioned way in the oven but failed to start it in time. It turned out fabulously so I'll probably stick to the IP version in the future. In the pot with the beef was a lot of mushrooms, a bit of carrots and a tiny bit of potato (I guess I had forgot to order them on my last order). On the side, we had a pan of oven roasted asparagus.
