I have frozen stock and frozen cooked turkey. I am thinking I can't defrost them, make soup, and re-freeze. Can I saute mirepoix (carrots, onion and celery) and then freeze that?  Or would that not work?

I just found this online also : "Mirepoix can be made and stored in freezer plastic bags.  Make sure to label them and use within two months. Freezing might make the mixture a bit soft.  It’s best to use this in soups and stews that are cooked for a long time or blended where the texture does not need to be chunky."

I am going to try it. I have some celery that will go bad.
