Teaman, this is a homeschooling forum, not a culinary one. While a fair number of us do brew some tea, you're not likely to find a lot of fermentation experts. Sorry.

Best wishes in your search.

Isn't kombucha fermented tea?

Yes.  He was referring to Kombucha.  Thus the reference to SCOBY which apparently means "Symbiotic Culture of Bacteria and Yeast".  (And now I've learned my one new thing today from the internet.)

I am quite curious about fermenting tea now too. I was watching something on Curiosity Stream today about fermenting to make bread and was looking at trying to do that.  https://www.theclevercarrot.com/2019/03/beginner-sourdough-starter-recipe/

the fermenting i was talking about was the tea for Kombucha. Sorry about the misunderstood post

You do not need to be sorry!!! This Kombucha looks great! I mean, I only googled it. But I am curious about it. Plus, I think a lot of us are bored today so it is kind of nice to have a new person to introduce us to new things today.

i have been making it and drinking it for several years. for some reason the SCOBY that i bought just doesn't seem to ferment the tea the way it used too. If you like Kombucha, which is a great antioxidant, it will save you lots of $$. And you can add any flavor to the tea from fruit juices to spicy cayenne or whatever you like

Have you split the SCOBY? Also, if you have a bottle of kombucha you can form a new scoby from that. You may have killed the scoby. It can happen many different ways. Be sure there isn't mold on the scoby or in the area it is kept. Be sure the room temp is around 70F.

Cultures for Health has how to videos.
