Favorite ways to use leftover turkey

I found a great bargain on turkeys at my grocery store (10 cents a pound!!), so I bought several. I'm cooking them and freezing the meat. I also made broth.

I make turkey tetrazzini  and turkey pot pie from my Better Homes and Garden red plaid cookbook (family favorite). Of course, turkey sandwiches (planning to try turkey pesto paninis for a change). I made Ina Garten's make ahead gravy this year and love it -- https://www.foodnetwork.com/recipes/ina-garten/make-ahead-turkey-gravy-with-onions-and-sage-5486134 -- so we may sometimes just have slices of roast turkey with gravy. But I could use a lot more ideas. What do you do with your leftover turkey? Please link a recipe, if you have one!

Here are my leftover turkey plans this year.  I made a 12 lb turkey for four people so I had a LOT of leftovers:

Turkey club sandwiches

Curry turkey salad (I use Ina Garten's curried chicken salad recipe for this.)

Bone broth in the pressure cooker

Creamy turkey and wild rice soup (with the homemade stock)

Turkey pot pie OR turkey and dumpling soup 

I still have the stuff for the last two meals in the freezer because we need a break from turkey. My daughter loves these Greek Turkey Burgers, but you need to start with raw turkey to make them. I 'grind' raw meats in my cuisinart for stuff like this.

I pretty much treat turkey like I would chicken.  Add mexican spices for a taco filling or stuff in in tortilla with cheese and pour over enchilada sauce.  Make a chicken divan casserole (meat, carrots, broccoli, cauliflower, cream of what ever soup (I do a homemade variation), cheddar cheese, top with bread crumbs). Make a stir fry or fried rice.
