whitestavern
We are celebrating one family Christmas next Saturday. Two of the attendees eat mostly vegetarian and dairy free. Does anyone have a great soup/stew or casserole recipe to share that could be an entree for them? There will be quite a few side dishes they can eat, but I also wanted to offer something more substantial. TIA!
Julie in Austin
I made this for my vegan son to eat at Thanksgiving, and even the carnivores loved it: https://www.deliciouseveryday.com/mushroom-wellington/
whitestavern
Wow, that looks amazing! I've never seen vegan puff pastry. Would Whole Foods have something like that, do you think??
KungFuPanda
I’d do a vegan pumpkin or mulligatawny soup.
Violet Crown
Dh is making vegan mushroom risotto. He also makes a vegan asparagus risotto. They're tasty. I'm sure there's a recipe on-line.
Kebo
I can vouch for this vegan lasagna. I add sautéed red peppers and mushrooms to it, and be sure to use a good sauce (I like Rao's marinara 50:50 with Prego's fresh mushroom). It is actually pretty easy to make. https://www.goodhousekeeping.com/food-recipes/healthy/a18033/vegan-tofu-spinach-lasagna/

Pepperidge Farm puff pastry (found in every regular grocery I've ever been in) is vegan.
whitestavern
Thanks, YaelAldrich. I never knew that was vegan! Still not sure what I'll make, but thank you everyone for your ideas. They really do all sound delicious.
Chris in VA
We love the simple shrimp creole in the Better Homes and Garden cookbook. ETA: IF they are more pescatarian. Edited December 19, 2018 by Chris in VA

hornblower
If you don't want to cook, get a Field Roast. Add vegan mushroom gravy and just make sure the veg*n people get dibs first because I find in many buffets, the omnis eat up all the veg*n stuff. https://fieldroast.com/product-family/roasts-loaves/

MercyA
When I was vegan, I always appreciated seeing beans and rice. Simple and filling! I also wanted to note (again) that all Marie Callendar fruit pies (except pumpkin and pecan) are vegan. :)
