Great vegetarian soup for a crowd?

These are both vegan* and get a thumbs up at our house.  I especially like the chili because of the toppings that customize it, but it makes more work when you are feeding a crowd. 




*If you don't top the chili with sour cream or cheese.

It is easily customizable by veggies you like/have on hand, plus it can be made more hearty by adding extra cans of beans or lighter by not adding any at all.  

The only three changes I make are that 1. I don't use cauliflower (because not readily available where I live), 2.  I usually bulk up with extra veggies, often including a bag or two of simple, plain frozen veggies to cut down on chopping, and 3.  Add salt to taste--just until the flavor shines.  Eatingwell recipes are generally over sweet and under salted. ?
