Main dish for 20

Recommended Posts

I need to provide a main dish for a meeting that will have about 20 people at it.  Others will be bringing salad, drinks, and dessert.  This is a monthly meeting, and I think they get a lot of lasagna and spaghetti; I'd like to bring something different that won't break the bank.  Maybe baked chicken thighs?  Any other/cheaper ideas?

Chili can be less break-the-bank than shredded chicken. Make the meat go further by adding more beans, onions, etc faster than you add more meat. So maybe triple all the veggies but only double the meat. The rest of the ingredients are pretty cheap.

pastictio.   it's basically a greek lasange - but the spices are very different, and it has bechamel sauce on top.   you can double it.

I use regular macaroni - just slightly less than called for.

yummy.

Chile? You could do a standard beef chili or a white chicken chili with thighs.

Pot pie? You could make a big one in a lasagne pan... just need to roll the dough different.

Beef stew/chicken stew?

A tray of sausage and peppers/onions (could also add potatoes to stretch further)

I make a super easy chicken chili that is just shredded chicken thighs, diced tomatoes, cans of chili beans, and some chili beans.
