Last night was Freezer Meal Monday: we had roasted vegetable medley thawed and tossed with pasta, feta and Parmesan. Youngest ate 3 servings! I make the crispy peanut tofu from this recipe: https://minimalistbaker.com/crispy-peanut-tofu-cauliflower-rice-stir-fry/ (I quadruple the amount of tofu, though, so there's plenty for everyone and my kids don't fight over it. :laugh: ) and then I make the spicy chickpeas from this recipe: https://minimalistbaker.com/sweet-potato-chickpea-buddha-bowl/ I use frozen riced cauliflower and saute it with a little sesame oil. LOL It was almost Lucky Charms, so at least I chose something with protein and less sugar. This meal was actually one of my "pregnancy nausea triggers that never went away after childbirth". But I have the stuff and don't want to waste it and I have to face my fear of re-boiled chicken at some point. Oh my word! :ack2: I was going to eat chicken salad lettuce cups with dh but ds told me he'd already signed me up for Wednesday night supper, so now I have to go. I will have chicken salad in the fridge when I get home.... yum! Good reminder to be thankful for our fabulous kitchen staff! Since there is always grilled chx and a salad bar, I am safe even if the main meal is not something I like.
