Do you have a recipe for this? It sounds yummy!

 

It's kind of a mishmash of parts of a couple recipes from the Minimalist Baker.

 

I make the crispy peanut tofu from this recipe:

(I quadruple the amount of tofu, though, so there's plenty for everyone and my kids don't fight over it. :laugh: )

 

and then I make the spicy chickpeas from this recipe:

I use frozen riced cauliflower and saute it with a little sesame oil.

 

Then heat up some frozen broccoli and put it all on the table.  :)  It's so good!

famiy had left overs.

 

Tacos for most

left over seafood pasta for dd10.

 

I had a beer and spicy/sweet jerky. LOL It was almost Lucky Charms, so at least I chose something with protein and less sugar.   LOL JAWM that it was healthier ok  :cheers2:

Chicken noodle soup, made with the remnants of a Costco chicken (carcass for stock, chicken for meat), salad, and cornbread.

 

This meal was actually one of my "pregnancy nausea triggers that never went away after childbirth". But I have the stuff and don't want to waste it and I have to face my fear of re-boiled chicken at some point. Everyone does.*

 

*except vegetarians

It used to be mine, too. We've got someone different cooking this year and it is AWFUL. Oh my word! :ack2: I was going to eat chicken salad lettuce cups with dh but ds told me he'd already signed me up for Wednesday night supper, so now I have to go.

I will have chicken salad in the fridge when I get home.... yum!

 

Good reminder to be thankful for our fabulous kitchen staff!

 

Since there is always grilled chx and a salad bar, I am safe even if the main meal is not something I like. They also have baked potatoes and pizza every week, if I am desperate for something hot or more substantial than salad.
