MEmama Posted September 11, 2017 Share Posted September 11, 2017 Sautee a diced onion, garlic, grated carrot, and grated parsnips if you like them until soft. In food processor, add veggies to the equivalent of a can of beans (I use black bean but pinto would work), 1 egg, 3/4 cup cooked quinoa, 1 Tbs tamari, 1 Tbs tomato paste, seasonings as you like them (I usually use cumin and oregano, or scallions) and 1/4 cup breadcrumbs. Mix, form into 1/4 cup patties. Bake at 425 for 25-30 minutes. I usually make a big batch and freeze them (uncooked). The egg can be left out if you want to go vegan.
