Butter Steamed New Potatoes

 

Peel a middle "band" of skin off of about 1 1\2 to 2 pounds of baby red skinned potatoes.

 

Melt 1\2 cup of butter with 1\4 cup of water, 1 tsp salt and 1\2 tsp pepper over low-medium heat. Add peeled potatoes. Cover and steam 20 to 25 minutes until tender. Don't remove lid but do give the pot a shame* from time to time to prevent sticking.

 

Once tender, remove from heat and add fresh or dried herbs to taste, like parsley.

 

This is a quick yummy summer dish that is essentially hands-off once you peel the potatoes. And if you're really in a hurry, you don't have to peel.

 

*only if it is a naughty pot, otherwise give it a shake.

Awww, thanks. I had bought a package of individually sealed strip steaks so I cooked enough for those of us at home.

 

I'll cook another one today and reheat the potatoes. We'll all have our steak dinner, just not at the same time.
