Low-Carb Chocolate Chia Pudding: 0.5C chia seeds 2C unsweetened almond milk 0.5C heavy whipping cream 2T cocoa powder 1T sweetener of choice or to taste (I used a stevia blend) dash of vanilla Mix together, let sit at least an hour or two in the fridge or overnight. After 2 hours, I had to give it a try. It was astonishingly good. I figured it'd be slimy... not at all. Authentic pudding texture with some slightly crunchy bits in it. You can also use regular milk if you aren't worried about carb count. You could also use water but up the cream a bit. But my very favorite thing for Chia seeds is to make chia seed gel (shake them up in a jar with water) and add the gel to smoothies. Looooove. I have them piling up all over my house because my husband keeps buying them and I forget to use them. Which makes it sound like I'm being sarcastic with my first statement. But I'm not. Tanaqui Posted March 18, 2017 Share Posted March 18, 2017 I haven't tasted anything bitter, but I flavor everything so strongly it might just be covered up! As for using as a binder, if I'm feeding four people I'll add a tablespoon of chia seeds and perhaps an egg - no flour, no oats, no breadcrumbs. Then just let it sit 15 minutes before cooking. I've heard of food sensitivity issues being pretty common with chia seeds, which is the other reason I'm not eating them multiple times daily.
