Well, I often make meatballs with mushrooms so it's kind of like that, but I saute the mushrooms first (I chop them up fine).  I've never tried doing it without that step, but I don't see why it wouldn't be similar.  But what you'd basically have is a meat ball made with chopped mushrooms.  Which I think would be tasty.

I want stuffed mushrooms, without the billion steps. Would I get the same result (taste wise) if I just cooked sausage, added onion/mushroom, and then baked with parmesan/cream cheese

We make them like this all the time - cook meat, add in onions and stuff and bake. I also do it simple by sautéing onions and mushrooms first (chopped), mixing in canned crab, then baking with Parmesan. Very simple, not complicated, extra yummy!
