I tried making mattar paneer a few nights ago and it was.... not inedible, but not anything like any mattar paneer I've had before! Quote

Garlic, onion, coconut oil, curry powder, then a pinch of flour, cook for a minute, add water, coconut milk, or apple juice (our favorite). Simmer with whatever veggies and legumes you prefer. I like potatoes, sweet potatoes, carrots, spinach or kale, peas, chickpeas, lentils. Have fun with it. Serve the whole mess over rice. I'm just learning Indian food, but a basic lentil daal with homemade naan is deeelishous and easy. The cafe itself is long gone, but the cookbook has it's fan base. It isn't an Indian food cookbook, but it has some of the best Indian recipes I have every made. I tear up pieces of a crusty baguette and drop them in the broth as I eat it. YUM! Sometimes I add bits of a wheat gluten chicken. 1 Quote
