DH is running his second one soon, and I'm trying to come up with ideas for quick and easy, no fuss food to send along with his group. Last year they didn't plan ahead, but they learned. :).

 

So far I'm planning to make baked scrambled egg "muffins", spring rolls, and homemade Lara bar type cashew date balls (rolled in oat flour so they aren't sticky).

 

Any other ideas? They have minimal cold storage, and food has to be hand held and simple. Nutrient and calorie dense is good, heavy is not.

 

Any other general tips for eating well/managing to sleep/ general advice? He's been training so hard and I want to do everything I can to encourage success.
