Quick ?: What to serve with Pesto Salmon???

So tonight's dinner is Pesto Salmon with green beans and cherry tomatoes (here's the link: http://www.cookingclassy.com/2015/07/pesto-salmon-and-italian-veggies-in-foil/?pp=0 in case you're curious)

 

But what to serve on the side??? Salad and...... pasta??? baked potato? couscous?? My brain is stumped.

I'd go with pasta. Orzo would be my first choice. Pesto seems pasta-ish to me.

Sounds good. Honestly, with the green beans and tomatoes, I would feel no obligation to make another veggie!

We'd probably serve that with spinach salad and doubling up on the green beans.

 

If I wanted a starchy carb, brown rice or pasta. Or skin on crispy oven fries.

Slice the potatoes very thin, drizzle olive oil on them with a tiny bit of salt. Cook in the oven until tender.  Serve under the fish.

 

Had the same dish you are making recently served like this and it was divine.

I would just add pasta to that meal, or bread.  There are plenty of vegetables for me there as it is.  :-)

probably too late for your supper but I would serve a brown rice/wild rice combo.

I would've used pasta with cauliflower, red peppers, and squash. And yes, a salad! (But we like our veggies here.)

Come to think of it, last time I had salmon with pesto butter here, my sides were roasted broccoli with lemon and garlic, green beans and oven fries. That was a good dinner.
