Um_2_4 Posted August 16, 2016 Posted August 16, 2016 So tonight's dinner is Pesto Salmon with green beans and cherry tomatoes (here's the link: http://www.cookingclassy.com/2015/07/pesto-salmon-and-italian-veggies-in-foil/?pp=0 in case you're curious) But what to serve on the side??? Salad and...... pasta??? baked potato? couscous?? My brain is stumped. Quote
Janie Grace Posted August 16, 2016 Posted August 16, 2016 I'd go with pasta. Orzo would be my first choice. Pesto seems pasta-ish to me. 1 Quote
Um_2_4 Posted August 16, 2016 Author Posted August 16, 2016 No orzo, so how about penne and carrots? Quote
Janie Grace Posted August 16, 2016 Posted August 16, 2016 No orzo, so how about penne and carrots? Sounds good. Honestly, with the green beans and tomatoes, I would feel no obligation to make another veggie! 1 Quote
LucyStoner Posted August 16, 2016 Posted August 16, 2016 (edited) We'd probably serve that with spinach salad and doubling up on the green beans. If I wanted a starchy carb, brown rice or pasta. Or skin on crispy oven fries. Edited August 16, 2016 by LucyStoner 1 Quote
itsheresomewhere Posted August 16, 2016 Posted August 16, 2016 Slice the potatoes very thin, drizzle olive oil on them with a tiny bit of salt. Cook in the oven until tender. Serve under the fish. Had the same dish you are making recently served like this and it was divine. 2 Quote
marbel Posted August 16, 2016 Posted August 16, 2016 I would just add pasta to that meal, or bread. There are plenty of vegetables for me there as it is. :-) Quote
cjzimmer1 Posted August 16, 2016 Posted August 16, 2016 probably too late for your supper but I would serve a brown rice/wild rice combo. Quote
Tanaqui Posted August 16, 2016 Posted August 16, 2016 I would've used pasta with cauliflower, red peppers, and squash. And yes, a salad! (But we like our veggies here.) 1 Quote
LucyStoner Posted August 16, 2016 Posted August 16, 2016 Come to think of it, last time I had salmon with pesto butter here, my sides were roasted broccoli with lemon and garlic, green beans and oven fries. That was a good dinner. Quote
